Mussels In Cider
These wonderful parcels of absolute moreish delight align beautifully with cider. The incredibly tasty part of mopping up the delicious liquids and juices left with a hunk of freshly baked chunk of bread is worth the wait. The cider juice is full of the salty, sweet and smokey flavours. Don’t forget next time you are at the beach, take a bucket and collect some for your feed. Please only take what you need to eat and cook that day.

Ingredients
- 1.5 kgs of mussels, cleaned* (see notes below on cleaning)
- 50 g unsalted butter
- 150 g of smoked bacon (approx 6 – 8 slices)
- a sprinkling of chopped Thyme leaves
- 300 ml of dry cider
- 3 spring onions chopped and/or
- 1 small onion


Cleaning
If you need to clean the mussels, give them a good scrub under running water. Scrape off any
debris and pull or cut off the beards. Check each mussel and if they are open, give them a wee
tap and they should close straight away, if not, sadly discard them, they are not good to eat.
Method
Heat the butter gently in a large and heavy based pan with a lid on a medium heat. Once the butter has melted add the bacon and chopped thyme leaves and fry until the bacon starts crisping up. If you are using a small onion, this is the time to brown the onions in with the bacon.
Turn the heat up high and add the mussels and pour in the cider. Put the lid back on and give the pan a good old shake up, mixing all the mussels and bacon and cider together. Let this all steam for approx 5 – 6 mins until all the mussels have opened. Any unopened ones, pick out and discard.
Now sprinkle over the spring onions and again give it all a really good shake up. Find your favourite big bowl and garnish with the flat leaf parsley.
Place in the centre of the table with the crusty bread, butter and lemon wedges, and top up everyone’s glass with our Horneywink cider and toast to the long summer days ahead.
